Pumpkin Queijadas

Cozy and indulgent Pumpkin Queijadas, a delightful dessert with a buttery crust and creamy pumpkin filling, perfect for any occasion.

  • 1 (15-ounce) can pumpkin puree
  • 2 1/2 cups whole milk, divided
  • 6 tablespoons butter, cut into chunks
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cooking spray or 2 tablespoons melted butter for greasing muffin pans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Add the chilled butter chunks and mix until it resembles coarse crumbs.
  4. Press about a tablespoon of the mixture into the bottom of each muffin cup to create a mini crust.
  5. Whisk together the pumpkin puree, eggs, whole milk, and pumpkin pie spice until smooth.
  6. Gradually add in the sugar, mixing until dissolved.
  7. Pour the filling over the crusts in each muffin cup, filling them about 3/4 full.
  8. Bake for about 25-30 minutes until the edges are set and the centers have a slight jiggle.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  10. Serve with powdered sugar or a sprinkle of cinnamon if desired.

Notes

These queijadas are great warm with whipped cream or chilled for snacks. Store in an airtight container in the fridge if making ahead.
