Pumpkin Sourdough Bread

A delightful combination of tangy sourdough and sweet, spiced pumpkin perfect for autumn.

  • 2 cups pumpkin puree
  • 1 cup sourdough starter
  • 4 cups all-purpose flour
  • 1 1/2 cups water
  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Combine the pumpkin puree and sourdough starter in a large mixing bowl. Add the water until smooth.
  2. Whisk together the flour, salt, sugar, cinnamon, and nutmeg in another bowl.
  3. Add the dry ingredients to the pumpkin mixture, stirring until a shaggy dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  5. Shape the dough into a ball and place it in a greased bowl, covering it with a damp towel.
  6. Let it rise in a warm place for 4-6 hours until it doubles in size.
  7. Punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
  8. Cover and let it rise for another 1-2 hours until puffed up.
  9. Preheat the oven to 375°F (190°C). Bake the loaf for 30-35 minutes until golden and hollow-sounding when tapped.
  10. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

Slice thick and enjoy with butter, cream cheese, or a sprinkle of cinnamon sugar.
