Spring Onion Soup

A delightful Spring Onion Soup that’s creamy, comforting, and refreshing, perfect for celebrating fresh produce in spring.

Ingredients

  • 1 bunch Spring Onions (Scallions)
  • 2 medium Potatoes, diced
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Stock
  • 2 tablespoons Olive Oil or Butter
  • 1/2 cup Heavy Cream (optional)
  • Salt & Pepper, to taste
  • 1 tablespoon Lemon Juice (optional)

Instructions

  1. Prepare Your Ingredients: Clean spring onions, trim roots, chop into pieces. Peel and dice potatoes.
  2. Sauté the Aromatics: Heat olive oil or butter in a pot. Add white parts of spring onions and garlic, sauté for 3-4 minutes.
  3. Add the Potatoes: Stir diced potatoes into the pot for a couple of minutes.
  4. Pour in the Stock: Add enough stock to cover potatoes. Bring to a boil, then simmer for 15-20 minutes until tender.
  5. Blend the Soup: Use an immersion blender to puree until smooth.
  6. Finishing Touches: Return soup to pot, stir in heavy cream and green tops of spring onions. Season with salt, pepper, and lemon juice.

Notes

Feel free to add other veggies or spices for variation. Keeps well and can be frozen for later.
