  • 1 box instant pudding (vanilla or lemon flavor)
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 4 large eggs
  • Zest of 1 orange (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your pan by greasing a 9×13 inch baking pan with cooking spray or butter.
  3. Mix the dry ingredients: combine yellow cake mix and instant pudding mix in a large mixing bowl.
  4. Incorporate the wet ingredients: add orange juice, vegetable oil, and eggs, mixing until smooth.
  5. Add the zest, if using, and fold it in gently.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
