French Strawberry Cake

  • 1 1/4 cup granulated sugar (divided)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 16 ounces fresh strawberries (sliced)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream the softened butter and 1 cup of sugar together until creamy and light.
  3. Add the eggs one at a time, fully incorporating each before adding the next, then mix in the vanilla extract.
  4. Mix the flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients with the creamed butter mixture, alternating with sour cream.
  6. Fold in the sliced strawberries gently with a spatula.
  7. Pour the batter into the prepared cake pan and spread it evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan for 10 minutes before transferring it onto a wire rack to cool completely.

Notes

Dust with powdered sugar before serving or top with whipped cream and fresh mint.
