Green Goddess Herb Soup

A vibrant and nourishing soup packed with fresh herbs and vegetables, perfect for any occasion.

Ingredients

  • 1 cup fresh basil leaves
  • 1 cup fresh parsley leaves
  • 2 cups fresh spinach
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  1. Sauté the garlic in olive oil over medium heat for 1-2 minutes until golden and fragrant.
  2. Add the vegetable broth and bring to a gentle boil.
  3. Toss in the basil, parsley, and spinach. Cook for 5-7 minutes until wilted.
  4. Blend the mixture until silky smooth.
  5. Add the coconut milk, stir until combined, and season to taste.
  6. Serve hot, garnished with olive oil and fresh herbs.

Notes

For a creamy avocado version, replace half the coconut milk with ripe avocado.
