Refreshing Watermelon Mochi

A guilt-free summer dessert combining sweet watermelon with chewy mochi for a delicious treat.

  • 1 cup Glutinous Rice Flour
  • 1 cup Fresh Watermelon Juice
  • 23 tablespoons Granulated Sugar
  • 2 tablespoons Cornstarch

Instructions

  1. Prepare the Watermelon Juice by slicing watermelon, blending until smooth, and straining.
  2. Mix the Mochi Dough by whisking glutinous rice flour and granulated sugar in a bowl, then gradually pouring in watermelon juice.
  3. Steam the dough for about 20 minutes until translucent.
  4. Cool the dough for 10 minutes then shape it on a cornstarch-dusted surface.
  5. Dust each piece with cornstarch and serve.
