Herb and Radish Salad with Feta and Walnuts

  • 1 bunch radishes, thinly sliced
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh mint leaves
  • 1/4 cup fresh dill fronds
  • 1/3 cup walnuts, toasted and chopped
  • 1/3 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper, to taste

Instructions

  1. Prepare the radishes by washing them under cool running water and slicing them thinly.
  2. Chop the parsley, mint, and dill into bite-sized pieces.
  3. Toast the walnuts in a dry skillet over medium heat for about 5 minutes.
  4. Mix the dressing in a small bowl by whisking together olive oil, lemon juice, honey (or maple syrup), and a pinch of salt and pepper.
  5. Combine the sliced radishes, chopped herbs, toasted walnuts, and crumbled feta in a large mixing bowl.
  6. Dress the salad with the prepared dressing and gently toss to combine.
  7. Taste the salad and adjust seasoning with extra salt and pepper if needed.

Notes

For a citrus twist, add grapefruit or orange segments. For a spicy kick, toss in sliced jalapeño or red pepper flakes.
