Irresistibly Fluffy Strawberry Cinnamon Rolls

Delightfully fluffy cinnamon rolls filled with fresh strawberries and topped with a creamy frosting, perfect for a cozy breakfast.

  • 1/2 cup brown sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 2 cups bread flour (for tangzhong)
  • 2 cups bread flour (for dough)
  • 1/4 cup sugar
  • 2 tsp active dry yeast
  • 1 tsp salt
  • 1/2 cup warm milk
  • 1/4 cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 tbsp unsalted butter (softened)
  • 1/2 cup brown sugar (for filling)
  • 2 tsp cinnamon
  • 1/2 cup strawberry jam (for filling and frosting)
  • 6 tbsp unsalted butter (for frosting)
  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 2 tbsp milk (for frosting)

Instructions

  1. Prepare the Strawberry Filling: In a small saucepan over medium heat, combine the 2 cups mashed strawberries, 1/2 cup brown sugar, 1 tbsp lemon juice, and 1 tbsp cornstarch mixed with 1 tbsp cold water. Cook while stirring gently until the mixture thickens, about 5-7 minutes.
  2. Create the Tangzhong: In a saucepan, combine 2 cups of bread flour and 1/2 cup warm milk over medium heat. Stir until it’s a paste-like consistency. Transfer into a bowl to cool.
  3. Activate the Yeast: In a large mixing bowl, combine 2 tsp active dry yeast, 1/4 cup sugar, and a pinch of salt into the remaining 1/2 cup warm milk. Let it sit for about 5-10 minutes, until frothy.
  4. Make the Dough: Add the tangzhong, the egg, 1 tsp vanilla extract, and 4 tbsp softened butter to the yeast mixture. Mix and incorporate the remaining 2 cups of bread flour. Knead until smooth and slightly tacky.
  5. First Rise: Place the dough in a greased bowl, cover with a cloth, and let rise in a warm spot for about an hour, or until doubled in size.
  6. Prepare the Filling: Roll out the risen dough into a rectangle, spread the strawberry jam, and sprinkle with 1/2 cup brown sugar and 2 tsp cinnamon.
  7. Roll and Cut: Starting from one edge, roll the dough into a log and slice into 12 rolls.
  8. Second Rise: Place rolls in a greased baking dish, cover, and let rise for another 30 minutes.
  9. Bake: Preheat oven to 350°F (175°C). Bake for 25-30 minutes, or until golden brown.
  10. Make the Frosting: Mix 6 tbsp softened butter, 4 oz cream cheese, 1 cup powdered sugar, and 2 tbsp milk until smooth. Frost the rolls after they cool slightly.

Notes

These can be customized with different fruits or nuts. Store leftovers in an airtight container for up to 2 days.
