Garden Vegetable Spread

A delightfully creamy garden vegetable spread that is perfect for dips, sandwiches, and more.

  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • ½ cup grated carrot
  • ½ cup finely diced zucchini
  • ¼ cup finely diced red bell pepper
  • 2 cloves garlic (minced)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • 3 tablespoons cream cheese (softened)
  • 3 tablespoons mayonnaise
  • ¼ cup finely shredded mozzarella cheese
  • 1 tablespoon fresh parsley (finely chopped)
  • 1 teaspoon lemon juice

Instructions

  1. Heat the olive oil in a medium skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until they’re translucent.
  2. Toss in the grated carrot and diced zucchini. Cook for another 3-4 minutes until the zucchini softens slightly.
  3. Add the diced red bell pepper and minced garlic to the skillet. Cook, stirring occasionally, for 2 more minutes.
  4. Stir in the Italian seasoning and paprika. Let everything mingle together for another 1-2 minutes.
  5. Remove the skillet from heat and let the mixture cool for about 10 minutes.
  6. In the bowl, mix in the softened cream cheese and mayonnaise until well combined.
  7. Then fold in the shredded mozzarella cheese, chopped parsley, and lemon juice.
  8. Cover the bowl and refrigerate the spread for at least 30 minutes.

Notes

This spread can be made ahead of time and tastes even better the next day. Serve with fresh vegetables or on crackers.
