Strawberry Whoopie Pies

Delight in these soft, cake-like Strawberry Whoopie Pies filled with luscious cream that are perfect for any occasion.

  • 1 box cake mix (strawberry flavored)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Combine the strawberry cake mix, eggs, and vegetable oil in a mixing bowl and mix until smooth.
  3. Scoop about a tablespoon of batter onto the prepared baking sheets, keeping them about 2 inches apart.
  4. Bake for 10 to 12 minutes until they spring back when touched, then cool on wire racks.
  5. Whip together the cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Spread the cream filling on the flat side of one pie and sandwich with another pie, flat side down.
  7. Garnish with fresh strawberries on top and a dusting of powdered sugar, if desired.

Notes

These whoopie pies can also be frozen. Well wrapped, they make a perfect sweet treat for later!
