Huckleberry Lemon Sweet Rolls

A delightful recipe for soft and fluffy rolls filled with sweet huckleberries and topped with a zesty lemon glaze.

  • 3 cups all-purpose flour
  • 1 cup buttermilk (room temperature)
  • 2 tbsp unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 tsp active dry yeast
  • 1 cup fresh huckleberries
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1/4 cup melted butter (for brushing)
  • 1 cup powdered sugar
  • 2 tbsp lemon juice (for glaze)
  • 1 tsp milk (optional)

Instructions

  1. Activate the yeast by combining 2 tsp of active dry yeast with 1/4 cup of warm water and 1 tbsp of sugar in a small bowl. Let it sit for 5-10 minutes until frothy.
  2. Mix the dough by combining 3 cups of flour, 1/4 cup of sugar, and 1 tsp of salt in a large bowl. Make a well in the center and add the yeast mixture, 1 cup of buttermilk, 2 tbsp of melted butter, lemon zest, and 2 tbsp of lemon juice. Mix until a sticky dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm area for about 1 hour or until doubled in size.
  5. Roll out the dough onto a floured surface into a ¼ inch thick rectangle and brush with 1/4 cup of melted butter.
  6. Sprinkle the fresh huckleberries evenly over the dough.
  7. Roll the dough tightly from one end, sealing the seam, and cut into 12 equal rolls.
  8. Cover the rolls and let them rise for another 30 minutes.
  9. Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
  10. Whisk together 1 cup of powdered sugar, 2 tbsp of lemon juice, and 1 tsp of milk to make the glaze.
  11. Drizzle the glaze over the warm rolls once they’ve cooled for 10 minutes.

Notes

These rolls are best enjoyed warm. You can make the dough ahead of time and refrigerate it before rolling it out.
