Lemon Pizza

A zesty twist on traditional pizza with lemon zest, fresh herbs, and gooey mozzarella cheese.

Ingredients

  • 1 ball Easy pizza dough (or store-bought dough)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz (150 grams) fresh mozzarella
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley (for serving)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Prepare the pizza dough by letting it sit at room temperature or stretching it out into a 12-inch circle.
  3. Spread the olive oil over the dough.
  4. Mix your herb and garlic concoction in a small bowl.
  5. Layer on the cheese by tearing pieces of mozzarella and scattering over the dough.
  6. Add the herb-garlic mixture on top of the mozzarella.
  7. Top with Parmesan cheese.
  8. Bake your pizza on a preheated stone or baking sheet for about 10-12 minutes.
  9. Finish it off with a drizzle of lemon juice and fresh parsley before serving.

Notes

This pizza can be served with lemon wedges and a side salad for a refreshing meal. It freezes well for later enjoyment.
