A refreshing and luxurious dessert that combines tangy lemon flavors with the creamy texture of cheesecake, perfect for any occasion.

Ingredients

Scale
  • 8 oz Cream Cheese
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Granulated Sugar
  • 1/4 cup Lemon Juice (freshly squeezed)
  • 1 tablespoon Lemon Zest
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare your gelatin: In a small bowl, combine the gelatin powder with 2 tablespoons of cold water. Stir it gently and let it sit for about 5-10 minutes until it blooms.
  2. Mix the cream cheese: In a large mixing bowl, beat the cream cheese until smooth and creamy. Add sugar and beat until well combined.
  3. Add flavorful zing: Pour in the lemon juice, lemon zest, and vanilla extract into the cream cheese mixture. Beat until everything is combined.
  4. Whip the heavy cream: In a separate bowl, whip up the heavy cream until soft peaks form.
  5. Incorporate gelatin: Gently warm the bloomed gelatin for about 10 seconds, then stir it into the cream cheese mixture.
  6. Fold the two mixtures together: Gently fold the whipped cream into the cream cheese mixture until just combined.
  7. Chill out: Spoon the mousse into dessert cups and refrigerate for at least 2-3 hours until set.
  8. Serve with style: Garnish with fresh berries, crushed graham crackers, or whipped cream before serving.
