  • 1 lb tomatoes (cut in large wedges)
  • 1 cup mixed pitted olives
  • 1 shallot (peeled and minced)
  • 1 tablespoon capers (drained and rough chopped)
  • 1 cup mozzarella pearls
  • 4 large fresh basil leaves (finely chopped)
  • 1 tablespoon finely chopped fresh parsley
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • ¼ teaspoon dried oregano
  • 1 garlic clove (minced)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Gather your tools: a cutting board, a sharp knife, a large mixing bowl, and a whisk or spoon.
  2. Chop those tomatoes into large wedges to allow their juices to mingle.
  3. Mix in your olives, enhancing the salad with flavor and texture.
  4. Add shallots and capers to the bowl for extra sweetness and saltiness.
  5. Fold in the mozzarella pearls gently without mashing them.
  6. Add finely chopped basil and parsley, enjoying the heavenly aroma.
  7. Whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, minced garlic, salt, and black pepper in a small bowl.
  8. Drizzle the dressing over the salad and toss gently to coat.
  9. Let the salad marinate for about 15-20 minutes to meld the flavors.
  10. Taste and adjust seasoning as necessary before serving.

Notes

Best enjoyed fresh but can be stored in the fridge for up to 3 days. Wait to add mozzarella until ready to serve.
