Supreme Mashed Potato Pizza

A delightful mashup of creamy mashed potatoes and crispy pizza, topped with cheddar, bacon, and fresh chives—a nostalgic comfort food revolution.

  • Dough for one large pizza
  • 5 small Yukon Gold potatoes
  • 4 tbsp unsalted butter
  • 2 tbsp whipped cream cheese
  • 2 tbsp sour cream
  • 1 tsp salt
  • 1 1/2 cups (6 oz) cheddar cheese (shredded)
  • 8 slices bacon (cooked and crumbled)
  • Fresh chives (chopped)
  • Sour cream for topping

Instructions

  1. Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface until about 12 inches in diameter. Transfer to a baking sheet or pizza stone.
  2. Peel and chop the Yukon Gold potatoes into chunks. Place in salted boiling water and cook until fork-tender, about 15-20 minutes.
  3. Drain the boiled potatoes, return to pot, and add butter, whipped cream cheese, sour cream, and salt. Mash until creamy and smooth.
  4. Spoon the mashed potatoes evenly over the pizza crust, spreading to the edges.
  5. Sprinkle shredded cheddar cheese over the mashed potatoes, add crumbled bacon, and finish with fresh chives.
  6. Bake for 15-20 minutes, until cheese is bubbly and golden.
  7. Remove from the oven, let cool slightly, slice, and serve with a dollop of sour cream and reserved chives.

Notes

Can be made ahead of time by storing dough and mashed potatoes separately in the fridge. Assemble and bake when ready.
