Cinnamon Raisin Bread

A warm and cozy cinnamon raisin bread, perfect for breakfast or an afternoon snack, filled with sweet raisins and fragrant cinnamon.

  • 1 cup raisins
  • 2 tablespoons cinnamon
  • 3 ½ cups bread flour
  • 2 ¼ teaspoons yeast (1 packet)
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • ¾ cup warm water

Instructions

  1. Proof the yeast: In a small bowl, mix 1 packet of yeast with 1 tablespoon of sugar and ¾ cup of warm water. Let sit for about 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl, combine bread flour, remaining sugar, and cinnamon. Make a well in the center, pour in the yeast mixture, and add salt. Mix until combined.
  3. Knead the dough: Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. First rise: Place in a greased bowl, cover, and let rise until doubled in size, about 1-2 hours.
  5. Add the raisins: Punch down the dough and gently fold in raisins.
  6. Shape the loaf: Roll out into a rectangle, spread softened butter, and roll tightly into a log. Place in a greased loaf pan.
  7. Second rise: Cover and let rise for 30-45 minutes. Preheat oven to 350°F (175°C).
  8. Bake the bread: Bake for about 25-30 minutes until golden brown and sounds hollow when tapped.
  9. Cool and slice: Let cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Enjoy! Slice and serve with butter or your favorite spread.

Notes

For variations, consider adding nuts or swapping some raisins for apples. Store wrapped in plastic or freeze for later.
