Mediterranean Marinated Cauliflower Salad

A vibrant, fresh salad featuring marinated cauliflower, juicy tomatoes, and olives, all drizzled with a zesty vinaigrette.

  • 1 head Cauliflower
  • 1 cup Cherry Tomatoes
  • 1/2 medium Red Onion
  • 1/4 cup Black Olives
  • 1/4 cup Green Olives
  • 1/4 cup Parsley
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 clove Minced Garlic
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Red Pepper Flakes

Instructions

  1. Prepare the cauliflower: Remove leaves and cut into bite-sized florets, rinse, and pat dry.
  2. Blanch the cauliflower: Boil salted water, cook florets for 2-3 minutes, then drain and plunge in ice water.
  3. Prepare the veggies: Chop cherry tomatoes and red onion; add olives to a large bowl.
  4. Create the marinade: Whisk olive oil, vinegar, mustard, garlic, oregano, basil, salt, pepper, and red pepper flakes in a small bowl.
  5. Combine it all: Add cooled cauliflower to the veggies, pour marinade, and toss gently.
  6. Marinate: Cover and refrigerate for at least 30 minutes.
  7. Serve and enjoy: Toss again before serving and garnish with fresh parsley.

Notes

Letting the salad sit for a few hours or overnight enhances the flavors. This salad keeps well in the fridge for up to 3 days.
