Mediterranean Stuffed Sweet Potatoes

A vibrant dish featuring roasted sweet potatoes filled with a zesty mixture of chickpeas, cherry tomatoes, cucumbers, and olives, drizzled with olive oil and herbs.

  • 4 medium Sweet Potatoes
  • 1 can Chickpeas
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 small Red Onion
  • ½ cup Kalamata Olives
  • ½ cup Feta Cheese
  • ¼ cup Fresh Parsley
  • 2 tablespoons Fresh Mint (optional)
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic
  • 1 teaspoon Dried Oregano

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 200°C (400°F). Wash and dry your sweet potatoes, prick them with a fork, and roast for 45–60 minutes.
  2. Prepare the Filling: Drain and rinse chickpeas. In a bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and olives.
  3. Add Flavour: Crumble in feta, sprinkle parsley and mint, drizzle olive oil and lemon juice, and season with garlic and oregano.
  4. Stuff Those Potatoes: Slice roasted sweet potatoes, fluff the insides, and fill with the chickpea mixture.
  5. Final Touch: Return stuffed sweet potatoes to the oven for 10-15 minutes to warm the filling and meld the flavours.
