Easy Maple Bacon Breakfast Casserole

A delicious and easy-to-make breakfast casserole featuring crispy bacon, waffles, and sweet maple syrup.

  • 8 Large Waffles
  • 8 Slices Bacon, cooked and chopped
  • 4 Large Eggs
  • 2 Cups Milk
  • 1 Cup Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Ground Cinnamon
  • ½ Teaspoon Salt
  • ½ Cup Shredded Cheddar Cheese (Optional)
  • Fresh Berries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a pan over medium heat until crispy, about 7-10 minutes. Drain on paper towels and chop into bite-sized pieces.
  3. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt in a large bowl until smooth.
  4. Assemble the casserole by layering cut waffles, chopped bacon, and optional cheese in a greased 9×13-inch baking dish. Pour the egg mixture over the top.
  5. Bake for 30-35 minutes until golden and set.
  6. Let it rest for 5-10 minutes before serving.

Notes

Serve with a drizzle of maple syrup and fresh berries on the side. Can be made ahead and stored in the fridge overnight.
