Grilled Peach Blueberry Salad

A vibrant summer salad featuring grilled peaches, fresh blueberries, and mixed greens, topped with feta and nuts for a delightful crunch.

Ingredients

  • 2 ripe peaches
  • 1 cup fresh blueberries
  • 4 cups mixed greens
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts or pecans, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high.
  2. Cut the peaches in half and remove the pit. Brush with olive oil if desired.
  3. Place the peaches cut-side down on the grill for 4-5 minutes, then flip for 1 minute.
  4. Add mixed greens and rinsed blueberries to a large bowl.
  5. Crumble the feta cheese over the salad.
  6. Whisk together olive oil, balsamic vinegar, salt, and pepper for the dressing.
  7. Drizzle the dressing over the salad mix.
  8. Slice grilled peaches into wedges and add to the salad.
  9. Top with chopped walnuts or pecans before serving.

Notes

For a vegan version, omit cheese or use cashew cheese. Feel free to substitute the nuts with seeds if needed.
