  • 6 large Eggs
  • 1/2 cup Heavy Cream
  • 1 cup Mozzarella Cheese
  • 1/4 cup Parmesan Cheese
  • 1 pound Ground Meat (beef or pork)
  • 1 cup Pepperoni
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Garlic Powder
  • 1/2 cup Bacon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Cook your chosen ground meat until browned and fully cooked.
  3. Whisk together the eggs and heavy cream (or coconut milk).
  4. Mix in the mozzarella and parmesan cheese until combined.
  5. Add the Italian seasoning, garlic powder, salt, and black pepper; mix well.
  6. Combine the cooked meat and pepperoni (if using).
  7. Scoop into muffin tin, filling each cup about 3/4 full.
  8. Bake for about 20-25 minutes, or until golden brown and set in the center.
  9. Cool for 5 minutes in the tin, then transfer to a wire rack.

Notes

These muffins freeze beautifully; wrap and store them in an airtight container for up to a month.
