Autumn Grain Bowl

A delightful and nourishing grain bowl packed with farro, roasted squash, kale, and cranberries, perfect for celebrating the flavors of autumn.

Ingredients

  • 1 cup farro
  • 2 cups cubed butternut squash
  • 2 cups kale
  • ½ cup dried cranberries
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Cinnamon or nutmeg (optional)
  • Juice of half a lemon

Instructions

  1. Cook the farro: Rinse 1 cup of farro under cold water. In a medium pot, combine the farro with 3 cups of water and a pinch of salt. Bring it to a boil, then reduce heat and let it simmer for 25-30 minutes until tender. Drain excess water and fluff with a fork.
  2. Roast the squash: Preheat your oven to 425°F (220°C). Toss 2 cups of cubed butternut squash with olive oil, salt, and a sprinkle of cinnamon. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  3. Bring the kale to life: Wash 2 cups of kale, remove tough stems, and chop. In a large bowl, drizzle with olive oil and lemon juice, then massage the kale for a few minutes until tender.
  4. Combine it all: In a large bowl, mix the cooked farro, roasted squash, and massaged kale.
  5. Add cranberries: Toss in ½ cup of dried cranberries and mix gently to combine.
  6. Taste and adjust: Fine-tune flavors by adding more salt, a drizzle of balsamic vinegar, or feta cheese if desired.

Notes

For a protein boost, add grilled chicken or roasted chickpeas. Keep it plant-based with nutritional yeast for cheesy flavor.
