  • 1 pound Boneless Skinless Chicken Breasts
  • 1 cup Cornstarch
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 cup Vegetable Oil
  • 2 cups Jasmine Rice
  • 2 cups Shredded Lettuce
  • 1 cup Diced Cucumber
  • 1 cup Shredded Carrots
  • 2 stalks Chopped Green Onions
  • 1/2 cup Mayonnaise
  • 3 tablespoons Sweet Chili Sauce
  • 1 tablespoon Sriracha

Instructions

  1. Prepare the chicken by slicing it into bite-sized pieces and seasoning with salt, pepper, garlic powder, and paprika.
  2. Coat the chicken pieces with cornstarch, shaking off the excess.
  3. Heat the vegetable oil in a large pan over medium-high heat.
  4. Fry the chicken in batches for 3-5 minutes until golden brown.
  5. Make the sauce by mixing mayonnaise, sweet chili sauce, and Sriracha in a bowl.
  6. Cook the jasmine rice according to package instructions.
  7. Assemble the bowls with a base of rice, topped with fried chicken, sauce, lettuce, cucumber, carrots, and green onions.

Notes

Feel free to swap chicken for shrimp or tofu for different variations. Adjust the spiciness of the sauce to your preference.
