Juicy Black Raspberry Cobbler

Ingredients

  • Fresh Black Raspberries (4 cups)
  • Granulated Sugar (1 cup)
  • All-Purpose Flour (1 cup)
  • Baking Powder (2 teaspoons)
  • Salt (1/2 teaspoon)
  • Cold Unsalted Butter (1/2 cup)
  • Milk (1/2 cup)
  • Lemon Juice (1 tablespoon)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the black raspberries, half of the sugar (1/2 cup), and lemon juice in a bowl; let sit for about 10 minutes.
  3. Whisk together the flour, remaining sugar, baking powder, and salt in another bowl.
  4. Cut in the cold butter until it resembles coarse crumbs; then pour in the milk and mix until just combined.
  5. Pour the berry mixture into a greased 9×13 inch baking dish and drop spoonfuls of the topping over the berries.
  6. Bake for 30-35 minutes or until the topping is golden brown and the berries are bubbling.
  7. Cool for 10-15 minutes before serving with vanilla ice cream or whipped cream.
