12 tablespoons unsalted butter, divided
1 ½ cups granulated sugar, divided
2 teaspoons lemon zest
3 cups blueberries
1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
¾ teaspoon salt
1 ½ cups milk
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and grease a 3-quart baking dish with 1 tablespoon of butter.
Melt 8 tablespoons of butter in a microwave-safe bowl until liquid. Set aside to cool slightly.
Combine 1 cup of granulated sugar and lemon zest in a large bowl, then add blueberries and toss to coat.
Whisk together flour, baking powder, and salt in a separate bowl. In another bowl, mix milk, melted butter, and vanilla extract, then combine with dry ingredients until just mixed.
Pour the batter into the prepared baking dish and spoon the blueberry mixture on top. Sprinkle remaining 2 tablespoons of sugar over the top.
Bake for 45 to 55 minutes or until golden brown and a toothpick comes out clean.
Cool for at least 20 minutes before serving.
