Cherry Almond Tart

A delightful tart combining the tartness of fresh cherries with nutty almond undertones, perfect for any occasion.

  • 1 cup oat flour
  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1 tsp sea salt
  • 8 tbsp unsalted butter (cubed)
  • 1 tbsp almond milk
  • 2 cups fresh California cherries (pitted & halved)
  • 3 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp almond extract
  • 1 tsp lemon juice
  • 2 tbsp sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large mixing bowl, whisk together oat flour, almond flour, granulated sugar, and sea salt.
  3. Add the cubed unsalted butter and mix until it resembles coarse crumbs.
  4. Incorporate the almond milk and mix until the dough starts to come together.
  5. Form the dough into a tart pan, pressing it firmly into the bottom and up the sides.
  6. Blind bake the crust by covering it with parchment paper and pie weights, then bake for 10 minutes. Remove the weights and bake for another 5–7 minutes until lightly golden.
  7. Prepare the cherry filling by mixing the halved cherries with granulated sugar, cornstarch, almond extract, and lemon juice.
  8. Fill the cooled crust with the cherry mixture and sprinkle sliced almonds on top.
  9. Bake the tart for an additional 25–30 minutes until the cherries are bubbling and the top is lightly toasted.
  10. Cool completely before slicing and serving.

Notes

Dust with powdered sugar before serving for a touch of elegance. Pair with vanilla ice cream or whipped cream.
