Soft Peanut Butter Cookies

Chewy and velvety soft peanut butter cookies that are bursting with flavor, perfect for any occasion.

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (125g) creamy peanut butter
  • 1/2 cup (100g) granulated white sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 3/4 tsp (4g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (85g) semi-sweet chocolate chips
  • Sea salt flakes for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Incorporate the creamy peanut butter until combined.
  4. Add the egg and vanilla extract; mix until smooth.
  5. Combine the flour, baking soda, and salt in a separate bowl, then gradually add to wet ingredients.
  6. Fold in the chocolate chips.
  7. Scoop the dough onto a parchment-lined baking sheet.
  8. Sprinkle with sea salt and bake for 10-12 minutes.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan version, substitute the butter with coconut oil and the egg with a flax egg.
