Chicken Dumpling Soup

  • 4 cups chicken broth
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup onion, chopped
  • 1 teaspoon garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Prep your ingredients by chopping your veggies and shredding the chicken.
  2. Sauté the aromatics in a large pot over medium heat with melted butter for about 5-7 minutes.
  3. Bring in the broth and minced garlic, then stir and bring to a gentle boil.
  4. Add the shredded chicken, season with salt and pepper, and let simmer for about 10 minutes.
  5. Make the dumplings by whisking together flour, baking powder, salt, and black pepper, then adding milk and melted butter to form a dough.
  6. Dollop spoonfuls of the dumpling batter into the bubbling broth.
  7. Simmer and cover for about 12-15 minutes until dumplings are cooked through.
  8. Add the fresh parsley and adjust seasoning as needed.
