Chicken Pesto Panini

A delicious Chicken Pesto Panini bursting with flavor, perfect for summertime gatherings and cozy evenings.

  • 2 boneless, skinless chicken breasts
  • 1/2 cup pesto
  • 8 oz fresh mozzarella cheese
  • 4 pieces panini bread (ciabatta, focaccia, or sourdough)
  • Olive oil or butter for grilling

Instructions

  1. Prep the chicken: Season chicken breasts with salt and pepper. Marinate briefly in olive oil, lemon juice, and garlic for about 15 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat. Add olive oil and cook chicken for 5-7 minutes on each side until golden brown and cooked through. Let rest and slice thinly.
  3. Assemble the panini: Slice panini bread in halves. Spread pesto on each side, layer sliced chicken, and fresh mozzarella.
  4. Press and grill the panini: Heat panini press, brush olive oil or butter on the outside of the sandwich, and grill for 3-5 minutes until cheese melts and bread is crispy.
  5. Slice and serve: Let the sandwich sit for a minute, then slice in half and enjoy!
