A vibrant and flavorful small-batch Cowboy Caviar dip, perfect for gatherings or personal snacking.

Ingredients

  • 1 tablespoon avocado oil (or light-tasting olive oil)
  • 3 tablespoons fresh lime juice (or bottled)
  • 1 clove garlic (finely minced)
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • Salt and black pepper (to taste)
  • 1 (15.5-ounce) can black beans (drained and rinsed)
  • ½ cup corn (frozen, fresh, or canned)
  • ½ cup diced cucumbers (partially peeled and seeds removed)
  • ½ cup diced tomatoes (seeds removed)
  • ½ cup diced bell pepper (any color)
  • ¼ cup finely diced red onion
  • 2 tablespoons finely diced jalapeño peppers (seeds and ribs removed, optional)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Prep your veggies: Begin by dicing your cucumbers, tomatoes, bell peppers, and red onion.
  2. Mix the dressing: In a medium bowl, whisk together the avocado oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper.
  3. Combine everything: In a large bowl, toss together the drained black beans, corn, diced cucumbers, tomatoes, bell pepper, red onion, and jalapeños (if using).
  4. Add the dressing: Drizzle the dressing over your veggie mix and fold everything together until well coated.
  5. Garnish with cilantro: Sprinkle on the fresh cilantro and give it another gentle mix.
  6. Chill out: Let it sit in the fridge for at least 30 minutes to meld the flavors.
