Mexican Street Corn Dip

A creamy, zesty, and slightly spicy dip that’s a crowd-pleaser, perfect for gatherings and cozy nights.

Ingredients

  • 1 can corn, drained
  • 1/2 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients by draining the corn and chopping the cilantro.
  2. Mix in a large bowl the cream cheese, mayonnaise, and sour cream until creamy.
  3. Add the drained corn and cotija cheese, gently folding them in.
  4. Incorporate lime juice, cilantro, chili powder, and season with salt and pepper to taste.
  5. Chill in the fridge for at least 30 minutes.
  6. Serve in a bowl with extra cotija and cilantro as garnish.

Notes

Feel free to add jalapeños for heat, or mashed avocado for a richer flavor.
