1 onion, diced
3 cloves garlic, minced
2 cans (14.5 ounces each) diced tomatoes
2 cups vegetable broth
1 cup heavy cream or coconut milk
1 teaspoon dried basil
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Sauté the aromatics: In a large pot over medium heat, add the olive oil. Once it’s warm and shimmering, toss in the diced onion and sauté until translucent and fragrant.
Add the garlic: Stir in the minced garlic and cook until fragrant, about a minute.
Pour in the tomatoes and broth: Add the diced tomatoes and vegetable broth, stirring to combine. Increase the heat and let it simmer.
Add dried basil and season: After 10 minutes of simmering, toss in the dried basil and season with salt and pepper.
Blend time: Using an immersion blender, carefully puree the soup until smooth and velvety.
Stir in the cream: Once blended, return the soup to the pot and stir in the heavy cream or coconut milk.
Serve and garnish: Ladle into bowls, sprinkle with fresh basil, and enjoy!
