Creamy Tomato Basil Soup

A colorful, creamy bowl of goodness that brings comfort, nostalgia, and warmth.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, add the olive oil. Once it’s warm and shimmering, toss in the diced onion and sauté until translucent and fragrant.
  2. Add the garlic: Stir in the minced garlic and cook until fragrant, about a minute.
  3. Pour in the tomatoes and broth: Add the diced tomatoes and vegetable broth, stirring to combine. Increase the heat and let it simmer.
  4. Add dried basil and season: After 10 minutes of simmering, toss in the dried basil and season with salt and pepper.
  5. Blend time: Using an immersion blender, carefully puree the soup until smooth and velvety.
  6. Stir in the cream: Once blended, return the soup to the pot and stir in the heavy cream or coconut milk.
  7. Serve and garnish: Ladle into bowls, sprinkle with fresh basil, and enjoy!

Notes

Can be served with crusty bread or grilled cheese. Great for freezing!
