Crunchy Asian Cabbage Slaw with Addictive Sesame Dressing

A vibrant and crunchy slaw made with green and purple cabbage, colorful bell pepper, and a heavenly sesame dressing.

Ingredients

  • 1 small head of green cabbage, finely shredded
  • 1 small head of purple cabbage, finely shredded
  • 2 carrots, grated
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • 1/2 cup cilantro leaves, chopped
  • 1/4 cup sesame seeds, toasted
  • 1/2 cup rice vinegar
  • 1/3 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Salt and pepper to taste

Instructions

  1. Start by finely shredding the green and purple cabbage.
  2. Grab your grater and get to work on those carrots.
  3. Thinly slice the red bell pepper into strips.
  4. Chop the green onions and set aside.
  5. In a small bowl, mix together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and ginger.
  6. Heat a small non-stick pan over medium heat and toast the sesame seeds.
  7. Combine in a large mixing bowl the shredded cabbages, grated carrots, sliced bell pepper, chopped green onions, and cilantro leaves.
  8. Pour the dressing over the top and give it a good toss.
  9. Sprinkle in salt and pepper to taste.

Notes

The slaw can be made ahead of time, allowing flavors to meld; just save the sesame seeds to sprinkle on right before serving.
