  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, canned or frozen
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. Prepare the Ingredients by gathering all your ingredients on the counter.
  2. Soften the cream cheese by letting it sit at room temperature for about 30 minutes.
  3. Mix the cheese base by combining softened cream cheese and shredded cheddar cheese in a bowl until smooth.
  4. Add the black beans, corn, diced tomatoes, red onion, cilantro, and jalapeño into the creamy mixture.
  5. Spice it up by sprinkling in lime juice, chili powder, and cumin. Season with salt and pepper.
  6. Form the cheese log by transferring the mixture onto plastic wrap, rolling it into a log shape.
  7. Chill the log in the refrigerator for at least an hour.
  8. Serve the Fiesta by unwrapping the cheese log and placing it on a serving platter with tortilla chips.
