French Onion Grilled Cheese

A delightful twist on the classic grilled cheese, combining rich, caramelized onions with gooey Gruyère cheese.

  • 4 slices of hearty bread (sourdough, rye, or rustic loaf)
  • 2 medium yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • ½ cup Gruyère cheese, shredded
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon fresh thyme (or a pinch of dried thyme)
  • Garlic powder (optional)

Instructions

  1. Caramelize the onions: Melt 2 tablespoons of butter in a skillet over medium heat. Add onions with a pinch of salt, stir occasionally for 15–20 minutes.
  2. Add balsamic vinegar and thyme to caramelized onions, cook for another 2 minutes.
  3. Prepare the bread: Spread softened butter on one side of each slice of bread.
  4. Assemble the sandwich: On the unbuttered side, layer caramelized onions and Gruyère cheese, then top with another slice of bread, buttered side out.
  5. Cook the sandwich: Heat a skillet, place the sandwich, and cook for 3–4 minutes until golden brown. Flip and toast the other side.
  6. Check for doneness: Ensure both sides are golden and cheese is melted, let sit for a minute before slicing.

Notes

Serve with onion soup for dipping or a salad on the side. Experiment with different cheeses or add bacon for extra flavor.
