Classic French Onion Soup

A cozy and heartwarming classic French onion soup featuring caramelized onions and melted Gruyère cheese.

  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 pounds onions, peeled, halved, and thinly sliced
  • ¾ teaspoon Kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¾ cup dry white wine
  • 1 tablespoon dry sherry
  • 2 tablespoons all-purpose flour
  • 8 cups beef broth
  • 1 bay leaf
  • 2 fresh thyme sprigs
  • ½ teaspoon Worcestershire sauce
  • 1 small baguette, sliced ½-inch thick
  • 6 ounces Gruyère cheese, grated
  • Optional: Fresh thyme leaves or chopped chives for garnish

Instructions

  1. Prepare your onions by peeling, halving, and slicing them thinly.
  2. Heat butter and olive oil in a large pot over medium heat.
  3. Caramelize the sliced onions while stirring in salt and pepper for about 30–45 minutes.
  4. Deglaze with white wine, scraping the pot to incorporate any stuck bits.
  5. Add flour and stir to mix, cooking for another minute.
  6. Pour in beef broth along with bay leaf, thyme, and Worcestershire sauce and bring to a simmer for 30 minutes.
  7. Taste and adjust seasoning as necessary.
  8. Toast baguette slices in a preheated oven at 400°F (200°C) for 5–7 minutes.
  9. Assemble by ladling soup into bowls, topping with baguette, and sprinkling Gruyère cheese.
  10. Melt the cheese under the broiler for 2–4 minutes until bubbling and golden.
