  • 1/3 cup red onion (finely diced)
  • 1 orange bell pepper (diced)
  • 1 jalapeño (seeded and minced)
  • 1/3 cup cilantro (chopped)
  • 1 large clove garlic (minced)
  • 1 lime (zested and juiced)
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Blue corn tortilla chips

Instructions

  1. Prep your beans: Start by rinsing and draining the black beans thoroughly.
  2. Mash it up: In a mixing bowl, add the black beans and mash them until creamy.
  3. Mix the magic: Add the drained Ro-Tel, diced red onion, orange bell pepper, minced jalapeño, chopped cilantro, minced garlic, lime zest, and lime juice into the bowl and stir until combined.
