Hawaiian Chicken Tacos

A vibrant blend of juicy chicken, fresh pineapple, aromatic spices, and a zingy lime kick, perfect for a tropical taco night.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup fresh pineapple, diced
  • ½ small red onion, finely chopped
  • 1 small red bell pepper, diced
  • 1 jalapeño, seeded and finely chopped
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of salt
  • 8 small flour or corn tortillas
  • ½ cup shredded cabbage or lettuce
  • ¼ cup crumbled feta or cotija cheese (optional)
  • Lime wedges for serving
  • Your favorite hot sauce or creamy sauce (optional)

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine the olive oil, soy sauce, honey, smoked paprika, garlic powder, salt, and black pepper. Whisk until well-blended.
  2. Heat Things Up: Grab a large skillet and heat it over medium-high heat with a splash of olive oil.
  3. Cook the Chicken: Add the marinated chicken thighs to the skillet in a single layer. Cook undisturbed for about 4-5 minutes until browned.
  4. Flip and Add Pineapple: Flip the chicken pieces and toss in the diced pineapple. Cook for an additional 4-5 minutes until cooked through.
  5. Prepare the Toppings: Chop the red onion, red bell pepper, jalapeño, and cilantro. Squeeze lime juice over the veggies and sprinkle with salt.
  6. Warm the Tortillas: In a separate pan, warm the tortillas over low heat for about 30 seconds on each side.
  7. Assemble Your Tacos: Add a scoop of the chicken and pineapple mixture onto each tortilla. Top with fresh veggies, shredded cabbage, and optional cheese.

Notes

For extra flavor, let the chicken marinate longer if possible. Serve with lime wedges and your favorite hot sauce.
