Huckleberry Lemonade

A refreshing blend of huckleberries and lemon juice, perfect for summer days.

  • 1 cup huckleberries (fresh or frozen)
  • ¾ cup sugar
  • 2 cups water (for simple syrup)
  • 1 cup lemon juice (freshly squeezed)
  • 4 cups water (to dilute)

Instructions

  1. Create your simple syrup: In a medium saucepan, combine 2 cups of water and ¾ cup of sugar over medium heat. Stir occasionally until the sugar dissolves, about 5-7 minutes.
  2. Prepare the huckleberries: Rinse fresh huckleberries and remove any stems. If using frozen, measure out 1 cup without thawing. Blend huckleberries with a splash of the simple syrup until smooth, about 30 seconds.
  3. Mix it all up: In a large pitcher, combine huckleberry puree, lemon juice, and 4 cups of water. Stir well to mix all flavors.
  4. Taste and adjust: Check the sweetness or tartness of the lemonade, adding more sugar or lemon juice as needed.
  5. Chill and serve: Cover the pitcher and refrigerate for at least 1 hour. Serve over ice, garnished with huckleberries or lemon slices.

Notes

For a sparkling twist, replace half of the water with sparkling water. This drink pairs well with grilled chicken or salads.
