  • 1 cup granulated sugar
  • 1 large egg

  • Zest of 1 lemon
  • 2 tablespoons dried lavender
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, baking soda, and salt in a mixing bowl and whisk together.
  3. Beat the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Toss in the lemon zest and dried lavender, stirring until incorporated.
  6. Gradually add the dry ingredients to the wet mixture in thirds; fold gently until no dry bits remain.
  7. Scoop the dough onto a lined baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Whisk together the powdered sugar and lemon juice in a small bowl to prepare the glaze.
  11. Drizzle the glaze over the cooled cookies.
  12. Sprinkle extra lavender buds on top for presentation.
