Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the butter and sugar until fluffy in a large mixing bowl.
  4. Add the egg and vanilla extract to the creamed mixture and beat well.
  5. Incorporate the lemon zest and lemon juice until well combined.
  6. Combine the dry and wet ingredients by gradually adding the dry mixture to the creamed mixture.
  7. Add the poppy seeds gently, folding them into the dough.
  8. Scoop the dough onto a parchment-lined baking sheet, spacing each scoop apart.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Make the frosting by beating together the cream cheese, powdered sugar, and vanilla extract until smooth.
