Instructions

  1. Prep Your Veggies: Start by chopping your cabbage, onion, carrots, and tomatoes.

  5. In with the Cabbage: Now, add your chopped cabbage to the pot and cook for another 5 minutes.
  6. Add Tomatoes and Broth: Pour in the diced tomatoes and vegetable broth. Bring to a gentle boil, then reduce the heat and let it simmer for about 20-30 minutes.
  7. Season to Taste: After simmering, taste your soup and sprinkle in salt, pepper, and thyme if using.
  8. Final Touches: Turn off the heat and let the soup sit with the lid on for 5 minutes before serving.
