  • 1 ripe avocado, sliced
  • 8 large romaine or butter lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice (for drizzling before serving)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons plain Greek yogurt or light ranch (optional)
  • 1/4 cup chopped red onion (optional)
  • 2 tablespoons chopped cilantro (optional)

Instructions

  1. Marinate the Chicken: In a bowl, place your boneless, skinless chicken breasts. Drizzle with olive oil, add garlic powder, paprika, salt, and pepper. Mix until the chicken is evenly coated. Let the chicken marinate for at least 20 minutes.
  2. Heat the Grill: Preheat your grill or grill pan over medium-high heat.
  3. Grill the Chicken: Once ready, add the chicken breasts to the grill. Cook for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  4. Rest the Chicken: After grilling, remove the chicken from the grill and let it rest for 5 minutes.
  5. Prepare the Lettuce: While the chicken is resting, rinse your lettuce leaves and pat them dry.
  6. Slice the Chicken: Once rested, slice the grilled chicken breasts into strips or chunks.
  7. Assemble the Wraps: Lay a lettuce leaf flat, and start layering! Add sliced chicken, avocado, cherry tomatoes, and any optional ingredients you’d like.
  8. Drizzle and Serve: Drizzle with lime juice and add Greek yogurt or ranch if using. Garnish with chopped cilantro and red onion if you like!
