  • 1 1/2 Tablespoons Fresh Rosemary, minced
  • 3 Teaspoons Dark Brown Sugar
  • 3 Teaspoons Kosher Salt
  • 1 1/2 Teaspoons Freshly Ground Black Pepper
  • 1/2 Teaspoon Crushed Red Pepper Flakes
  • 2 teaspoons Olive Oil

Instructions

  1. Marinade the Chicken: In a large bowl, combine minced rosemary, dark brown sugar, kosher salt, black pepper, and crushed red pepper flakes. Pour in the olive oil and mix everything until it transforms into a beautiful paste. Gently add the chicken to the bowl, ensuring each piece is thoroughly coated in the magical marinade. Cover it up and let it sit in the fridge for at least 30 minutes, or overnight if you have the time.
  2. Preheat the Grill: Fire up your grill to medium-high heat. A hot grill will create those gorgeous grill marks and seal in the delicious juices.
  3. Grill the Chicken: Once the grill is hot, place the marinated chicken on it. For bone-in pieces, grill for 6-8 minutes per side; boneless takes about 4-5 minutes per side.
  4. Check for Doneness: To ensure your chicken is perfectly cooked, use a meat thermometer. Chicken should reach an internal temperature of 165°F (75°C). Once it does, take it off the grill and let it rest for about 5 minutes.
