  • 14 oz pasta (rotini or penne)
  • 1 large cucumber (peeled and sliced into 1/2-inch half-moons)
  • 18 oz cherry tomatoes (halved)
  • 3/4 cup olives (sliced kalamata olives)
  • 5 oz feta cheese (crumbled)
  • 1/2 red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/3 cup olive oil (extra-virgin)
  • 4 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp oregano
  • 1 tsp honey
  • 3 garlic cloves (freshly pressed)
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package directions until al dente. Reserve a cup of pasta water before draining to add to your dressing if desired.
  2. Prep Your Veggies: While the pasta cooks, chop your cucumber, slice the cherry tomatoes in half, and finely chop your red onion and parsley.
  3. Mix the Dressing: In a small bowl, combine olive oil, red wine vinegar, lemon juice, oregano, honey, garlic, salt, and pepper. Whisk until emulsified.
  4. Combine Everything: In a large mixing bowl, combine cooked pasta, cucumbers, cherry tomatoes, olives, red onion, feta, and parsley. Pour the dressing over the salad and toss gently.
  5. Taste and Adjust: Taste your salad, adjusting salt, pepper, or lemon juice for optimal flavor.
  6. Chill and Serve: Let it chill in the fridge for at least 30 minutes before serving for enhanced flavors.

Notes

This salad can be made ahead of time but hold off on adding fresh ingredients like feta until you’re ready to serve.
