Mediterranean Spinach and Feta Crisps

Crunchy and savory bites, perfect as an appetizer or light snack, featuring vibrant spinach and tangy feta cheese.

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Olive oil spray

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized bowl, add the chopped spinach.
  3. Whisk together the flour, oregano, garlic powder, black pepper, and salt in another bowl.
  4. Beat the eggs until frothy, then mix in the crumbled feta and grated Parmesan.
  5. Add the chopped spinach to the wet mixture and fold in gently.
  6. Gradually add the dry flour mixture to the spinach and cheese combination.
  7. Line a baking sheet with parchment paper.
  8. Scoop generous mounds of the mixture onto the prepared baking sheet.
  9. Lightly spray the tops of the mounds with olive oil.
  10. Bake for 20-25 minutes, or until golden around the edges.
  11. Let them cool before serving.
  12. Enjoy while warm!

Notes

Serve with tzatziki or hummus for dipping.
