Easy Fruit Pizza

A delightful dessert that combines the sweetness of sugar cookies, creamy frosting, and a rainbow of fresh fruit.

  • 1 (16 oz) tube refrigerated sugar cookie dough
  • 1 (8 oz) pkg cream cheese, softened
  • 2 Tbs butter, softened
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 cups powdered sugar
  • 11 1/2 cups sliced strawberries
  • 1 kiwi, skinned and sliced in halves
  • 1/2 cup blueberries
  • Any other fruit you enjoy

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cookie dough. Remove the cookie dough from the tube and spread it out onto a pizza stone or a baking sheet lined with parchment paper. Use your hands to flatten it into a circle about 1/2 inch thick.
  3. Bake it! Place your cookie crust in the preheated oven and bake for 12-15 minutes or until the edges are golden and the center is set.
  4. Make the frosting. In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
  5. Blend in the extracts and powdered sugar. Add the vanilla extract, almond extract, and powdered sugar to the cream cheese mixture, and mix until combined and fluffy.
  6. Spread the frosting over the cooled cookie crust. Make sure to reach all the corners, spreading it generously!
  7. Decorate with fruit. Carefully arrange your sliced strawberries, kiwi, blueberries, and any other fruits you’re using on top of the frosted crust.
  8. Chill the pizza in the refrigerator for at least 30 minutes before slicing.
  9. Slice and serve. Cut your fruit pizza into cute wedges and serve it chilled.

Notes

For creative variations, consider adding a chocolate drizzle, nuts, or tropical fruits.
