Sausage and Potato Breakfast Bowls

A hearty breakfast bowl filled with fluffy eggs, crispy potatoes, savory sausage, and melty cheese that warms the soul.

  • 4 medium potatoes, peeled and diced into 1/2-inch cubes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: hot sauce, sour cream, avocado slices

Instructions

  1. Prep your ingredients: Wash and peel potatoes, then dice them. Beat eggs in a bowl with milk, salt, and pepper.
  2. Cook the sausage: Heat a skillet over medium heat, add sausage, and cook until browned (5-7 minutes).
  3. Add the potatoes: Mix diced potatoes into the skillet, drizzle olive oil, season, and cook for 10-15 minutes until crispy.
  4. Scramble the eggs: In a separate skillet, pour egg mixture and gently stir until slightly runny (3-5 minutes).
  5. Combine everything: Mix cooked sausage and potatoes with scrambled eggs, and sprinkle cheese on top. Cover until melted.
  6. Finishing touches: Stir in chopped green onions and serve in bowls with optional toppings.

Notes
