Spinach Mushroom Pasta

A delightful medley of spinach and mushrooms in a pasta dish that encapsulates the joy of cooking.

Ingredients

  • Favorite Pasta (spaghetti, fettuccine, or gluten-free options)
  • Fresh Mushrooms (cremini, button, shiitake, or portobello)
  • Fresh Spinach or Kale
  • Freshly Grated Parmesan Cheese (or vegan substitute)
  • Olive Oil
  • Salt
  • Minced Garlic
  • Lemon Juice (optional)
  • Red Pepper Flakes (for garnish)

Instructions

  1. Boil the pasta by bringing a large pot of salted water to a boil. Cook according to package instructions until al dente.
  2. Sauté the mushrooms in olive oil with a pinch of salt until golden brown, adding minced garlic.
  3. Add the fresh spinach and sauté until wilted, optionally adding a squeeze of lemon juice.
  4. Combine the drained pasta with the mushrooms and spinach, adding reserved pasta water to create a sauce.
  5. Finish with freshly grated Parmesan cheese, adjusting the consistency with more pasta water as necessary.
  6. Plate the pasta, garnishing with red pepper flakes or fresh herbs as desired.
